Indian Lentils with brown rice

Indian Lentils with Brown Rice

(originally from Saving Dinner)

THIS RECIPE is TRIPLED due to our family size. You can divide by three or look to the right side for the original recipe! 🙂

1/3 cup OLIVE OIL (6 TBSP)

3 ONIONS, sliced in rings (1 onion)

6 cups LENTILS, uncooked (2 c)

5 1/2 cups CHICKEN BROTH (plus a little more water)  1can (14 &1/2 oz) chicken broth

3 Tsp Curry powder, divided (1 tsp)

3 Tsp Garlic powder, divided (1tsp)

salt & pepper (to taste regardless size of family =)

4 1/2 cups brown rice (1.5 cup)

1 1/2 cup plain yogurt (1/2 cup)

Chopped Cilantro (we used green onions as that was what was available)


Heat Olive oil in frying pan, stir in onion and cook for about 10 minutes until browned. Remove heat and set aside.

In medium saucepan, cover lentils w/chicken broth and a little more water to cover them. Add half the spices, salt n pepper. Bring to boil, reduce heat & simmer about 5 minutes. **

Now add brown rice and enough water to cover the lentils and rice together Season with remaining spices. Cover the saucepan and simmer for approx 30 minutes or until the rice & lentils are tender.

Once tender mix half of the onions into the lentil mixture. Top with the plain yogurt and chopped cilantro & remaining onions to serve.

POSSIBLE SIDES: a favorite salad  with baby carrots

** When we made this it was much drier than we wanted and the children did not enjoy it at all. Some changes we are going to try is

1)  Start the rice first and then add in the lentils.

2) If they still seem kind of dry I plan on adding crushed tomatoes.
